chicken potato casserole

so i found this "loaded potato chicken casserole" on pinterest, so i ask Eric if that looks good to him for dinner tomorrow, and then i add "but i would substitute the bacon for broccoli- he wasn't excited about the trade off, but hey!  i HATE bacon! (shoot me i know, everyone else in the world loves it)
So i ended up changing the whole thing from the recipe, because i was recently told that if something is good, you can add butter and onion to make it GREAT… that and i bought a huge bag of onion, and they are all about to go bad, so i have to use them up!

ready…set…cook

Chicken potato casserole
2 skinless boneless chicken breasts- chopped into cubes
1 small onion- chopped
1 large potato- cubed
1 head of broccoli -broken into pieces
pepper
lawrys season salt (because its the bomb, and everything taste better with lowers)
1 Tablespoon of butter.
1 cup of your favorite cheese


spray a pan with pam, drop the butter on the bottom of the pan
add chicken, then onions, then potato and lastly the broccoli, season with pepper and lawrys to taste
and top off with your favorite cheese

you know what they say about cheese- "sweet dreams are made of cheese, who am i to dis a brie, Travel the world for feta please…" something like that

anyways toss that pan into the oven at 350 for about a half hour, check on it make sure the chicken is fully cooked and ENJOY
