buffalo chicken Quesadilla


Eric and I made a trip into town (yikes, a 40 minute drive to the nearest "mall") anyways. we decided to get a quesadilla maker!!! brilliant decision I might add.  I also know that I said Id cool it on the buffalo chicken recipes, but I can't help myself I LOVE THEM! so enjoy this beautiful lunch

p.s I might add that the mixture makes about 3 10 inch quesadillas, however I was fully stuffed after eating just half a quesadilla, and then I felt like puking I was so full once I finished the Whole quesadilla!

Buffalo Chicken Quesadilla
2 skinless boneless chicken breasts- cooked, shredded
2 oz cream cheese
1 green onion 
1/2 C onion chopped
1/2 C cilantro 
Franks- to taste
cheese- to taste
6- 10 inch tortillas

just mix the chicken, cream cheese, onions, cilantro and franks. Toss the mixture in a tortilla and add cheese, add another tortilla on top.  stick it in your quesadilla maker or on a pan on the stove works great too.
we got it for $17 (plus and additional military discount) can you believe that!
these are AMAZING. 
the little bite of cream cheese makes it so creamy and yummy!






Jalapeño Popper Dip



I'm too lazy to write anything with this. it was yummy, the bread crumbs on top were a bit unnecessary. so add them if you'd like, but skip them if you feel like it.

Jalapeño Popper Dip
1 package cream cheese- softened
1 cup of mayo
4 oz diced jalapeños
1 cup shredded cheese
bread crumbs


mix the cream cheese, cheese, mayo and jalapeños.  put them in a dish ( spray it first with pam) toss the bread crumbs on top. toss in the oven at 350 for 20ish minutes, or until golden brown on top. 


strawberry margarita jello shots


I originally heard of this idea, on one of those days at work, that drives me to drink… we have all had those days, so don't judge me (plus my coworkers poop and puke on me, and they cry a LOT).  anyways I was sitting in the staff lounge, playing on my phone, wishing I was at home, drinking a margarita, when someone goes "ohh yummy, look, strawberry margarita jello shots!"and showed me this awesome recipe from their phone… THANK YOU, life changing!


Strawberry Margarita Jello Shots
jello package - strawberry
1 C tequila
1/2 C triple sec 
3/4 C boiling water
1 package of strawberries- with the cores taken out

mix the jello and the boiling water add tequila and triple sec.  cut the very tip of your strawberries to get them to stand up right.  fill the core area with the jello and refrigerate for 4 hours! ENJOY
(p.s there will be extra jello so I recommend getting those little cups, because no one has time to shell THAT many strawberries!) 
personally, this took far too long.  Id maybe skip it next time, although they do look cute!

BBQ chicken

It is a beautiful day (in SoCal) and I got off work early (false alarm of pink eye, not my choice to go home either, I might add) so I thought, nothing reminds me of the coming summer quite like some good old fashion BBQ Chicken… I will add, that chicken on the bone freaks me out, but if you are a normal human being, get like wings or something, because the bone makes it taste yummier, plus its easier to eat!!


BBQ Chicken
dry rub
1 T paprika
1 T Garlic Powder
1 T black Pepper
1 T Lawry's seasoned salt (I put that s**t on everything)
1 t salt

cover your chicken breasts with the seasonings (mine covered two large chicken breasts) and let sit for as long as possible, like an hour or a day, in the fridge.

put on the grill.  just make sure the flames are REALLY low, low and slow, low and slow. toss the chicken on for about an hour (flipping when needed) then toss on your favorite BBQ sauce, allow to cook (and melt) an additional 5 or so minutes, flip and sauce the other side for another 5 minutes… and then ENJOY!!

Jack Honey and Monster



This is not a recipe, really. but it is AMAZING, and I like to put my money where my mouth is, and share the good things I've discovered so far in life.   So enjoy this amazing drink… its beautiful out (at least in So Cal) enjoy it out on the patio.

Spicy Chicken Avocado Salad

So my original attempt was to copy someone else's recipe on this, but turns out I did not have lime juice, and I HATE honey…so welcome to my new, easier version of this amazing meal.

Spicy Chicken Avocado Salad
2 chicken breasts- cooked and cut into chunks or shredded
2 avocados- cut into chunks
1 C onion- chopped
handful of cilantro- chopped
salt and pepper to taste
pita bread
Siracha- to taste

mix everything together and toss on, or in a pita bread top with siracha - ENJOY … how easy was that (no more excuses that its hard to make a healthy meal!)

Buffalo Chicken Sandwich



My buffalo kick has to be coming to an end, soon, but until then ENJOY!!

Buffalo Chicken Sandwich
2 chicken breasts- cooked- shredded
2 oz cream cheese- softened
2 celery sticks- chopped
2 green onions- chopped
1/4 cup cilantro- chopped
buffalo sauce- to taste
toast

in a bowl combine everything.  (I tossed it all in the microwave for a hot second just to warm it back up) and stick it in your toast.  boom. 
Eric says its the "best thing ever, that cilantro really did me in!"

Buffalo calzone

This recipe was a bit of an accident, and the idea of a buffalo calzone, is a bit redundant from my buffalo pizza idea. but I promise, this is WAY BETTER (honestly, I didn't even know it was possible). so I know I have already said, I'm a bit of a buffalo freak.  I've been obsessed since I tried some at hooters in San Diego (they really do have the best hot wings! lol) so enjoy this AMAZING recipe…

oh and also, I usually want to put ranch on everything; but I'm trying to be anorexic for a bit, so I haven't been eating it very much. but yesterday was my cheat day, so I put some ranch on my plate and never used it. mostly because there is a ranch flavor to this master piece, and also because its so good, id hate to ruin it!


Buffalo Calzone
1 tube of biscuits or pizza crust (I used flaky layers, but it was a bit tricky to flatten out) 
2 chicken breast- cooked and shredded
wing sauce (i.e Franks) to taste
1 package of ranch mix
1/2 onion chopped
4 oz of cream cheese- softened

in a bowl mix chicken, sauce, ranch, onion and cream cheese.
on a cookie pan, roll out the crust, place the chicken mixture on half the crust. fold the crust over the top of the mixture, and pinch the edges together.  make small slices along the top to allow for steam to escape.  

Bake at 350 for about 30 minutes 
ENJOY!
toss all those lovely ingredients together

I added a few sprinkles of garlic salt on the top for fun!

Philly Chicken and Cheese Sandwich in the Crock Pot

Now I have never actually had like a Philly cheese stake- mostly because of the stake part, but when I saw this recipe I HAD to have it.  like seriously, I might die with out it.  that being said, it was just as good as I imagined!

Philly Chicken Sandwich
*crock pot edition*
1 large onion- sliced
2-3 defrosted chicken breasts- cut into chunks
1 green pepper- sliced
2T- Dales seasoning
buns
cheese (your choice) 
2-3 T butter
salt and pepper to taste

Mix the chicken and seasonings in a small bowl, set aside. In the bottom of the crock pot toss in butter, add onions, then green peppers, then top it with the seasoned chicken.  cook on medium for 6-8 hours,  toss the mixture on your bun, top with cheese and ENJOY :) 


was told this is the BEST seasoning for this recipe. found it near the bbq sauces at the grocery store. It was delicious!
