Veggie mac and cheese!


Like i have said before- i live in the middle of no where, I'm home sick and lonely 99.9% of my life- so some good old comfort food like Mac and Cheese can turn a day around in a minute! however I also am not trying to die by the age of 30 from obesity. So when i saw on pintrest this awesome recipe of mac and cheese with VEGETABLES i almost pooped my pants- How perfect!

I had to change up the recipe because, I'm not even sure what evaporated milk is, but it doesn't sound good! also this lady who posted the recipe wanted you to stir the mac and cheese non stop for 10 minutes or something- stop right there lady, i have a life, kinda, i don't have time for such shenanigans!!

Eric gave this meal a 9.2, "because its real real good" also "because its like macaroni only better"…i married a genius i tell you what. 

Veggie Mac and Cheese:
shell noodles 
elbow noodles would probably be ok too
1 lb of cheese 
(i didn't use that much, i don't like it too cheesy) - and don't have a heart attack, it makes a TON of food, and cheese has lots of protein and calcium! use what ever you have on hand, i used Monterey, cheddar and Colby Jack all mixed together
1/2 a cup of milk
1 Tbs butter
2 cups of peas
1 cup corn
1/2 onion
                                                                                      1 cup Kale
                                                                                        1 cup spinach
                                                                                        1 cup broccoli 
or use what ever veggies you like/have laying around!


then you cook your noodles (i left them a little undone because you gotta cook them with everything else, but i mean just a LITTLE undone) add the veggies, milk, cheese, butter  and stir until its real yummy. add salt and pepper to taste, and then i added paprika and crushed red peppers because everything needs to be overly flavorful to me! and ENJOY- and enjoy it for like a week because it makes a lot, i even had to change pans half way through
