i may or may not be bipolar. i mean medically i am not, but im getting a bit worried. there are a few things that i just have NO IDEA what i want. so after spending all yesterday afternoon crying my eyes out on the couch cuz i was homesick, and spending all night pumped because my husband "surprised me" with drinks and appetizers. i have come to the idea that i am the most decicive indecive person i know... like look at that i cant even decide if i can decide or not.
for example i made two short lists of things

things easy to decide:
move to africa
get married
picking a home
get a dog
things hard to decide
"puppy play with me"---"noo puppy go away"
"im going to the gym to get fit"---"nahh these chips are looking delicous"

im not sure where i was going with this post-- new thought

tonight we are doing BENIHANA night. making homemade sushi, shrimp sauce (hopefully), shrimp, and crab cakes! boooya!

so i told ya'll i might upload recipes, so here is my ALL TIME FAVORITE recipe (i stole it from another blog, but altered the recipe to be way better- but the super cool thing about this recipe is, you can just throw what ever you have together, and alter it to your taste) 
mexican lasagna
Here is what you need: Makes about 6-8 servings.
- 12-14 tortillas (I used small tortillas, they fit better)
- 2 cups of shredded Mexican blend cheese
- 1 tbsp of fajita seasoning- or taco seasoning
- 28oz can of tomatoes
- 15.5 oz can of black beans ( i use 2 cans cuz im a vegitarian and i love beans)
- 15.5 oz can corn (or frozen, or fresh if you are real crazy)
- 2 cups of salsa 
- 2 cups of shredded chicken (or beef or no meat)
- 1 small onion, chopped
 -cottage cheese (as much as you like) 

Crockpot Mexican Lasagna
1. Spray crockpot with cooking spray. Lay down layer of tortillas. Each crockpot will vary in size. Mine took 4 small tortillas to cover the bottom.

Next, spread a layer of tomatoes.

2. Sprinkle some chopped onions & black beans on top of the tomatoes.

3. Cover beans with a layer of salsa & apply a generous amount of fajita seasoning.

4. Next layer on your chicken & corn. (pictured with vegetarian fake chicken)
5. Top corn with a layer of shredded cheese and cottage cheese.

Like I said, all crockpots are different shapes and sizes. So keep layering until you are a couple inches from the top. I was able to repeat the layers 3 times.

When you do reach the top, for the final layer, do a later of tortillas, topped with the rest of your tomatoes and cheese. 

6. Cook on low for 3-4 hours or on high for 2 hours. Top with sour cream of avocado :)
boom shock-a-lock-a you just made the best meal ever!!!!! eric and i are obsessed with it, i make it like at least once a week.
